When horticulturist do not look closely, they often cause a mess. So it happened with this leek, that became better known with the present enthusiasm for herbs and vegetables. Usualy it is sold as Allium odorum, but this name is an invalid synonym for Allium ramosum. Allium ramosum however is not cultivated, nor in its home China nor anywhere else. What we really have here is Allium tuberosum, one of the most important alliums for cooking in China and Korea (and now almost worldwide cultivated). It is excellent for culinary uses. It grows much larger than chives (up to half a meter) and therefore it is more productive. Its foliage is flat, not round like chives, and it tastes more like garlic than like onion. You can use it for all purposes where you would choose either chives or ramsons - only that is also available in the months when ramsons go dormant.
