To me Horse Raddish is a memory of my childhood: a hot day at the end of the summer vacations and our family sitting outside the house, taking turns in grating freshly harvested Horse Raddish roots with a grate. All were crying, for the vapour of graped Horse Raddish bites your eyes (that was the reason we did this work outside. Inside the vapour would have been much to concentrated). Today grated Horse Raddish can be bought in glasses - how boring! I`m sure nobody will ever remember that.
If you want to taste the unique flavour of freshly grated Horse Raddish you need this plant in your vegetable patch. There is no more need to cry, since today we have food processors to do the grating. You can use the grated Horse Raddish to prepare some dishes you can`t buy, like `Kren`: mix grated Horse Raddish with grated Red Bete (relation 2:1) and add to taste sugar, salt and vinegar. Delicious with cold roast beef!
