Hyssop once was an important plant to man. It played a part in kitchen, medicine and religion. Todays it has lost most of its culinary importance, the reason being probably that it looses most of its taste when dried and fresh herbs were out of fashion for many years. I bet hyssop will start a new culinary career as soon as one of the famoush chefs on TV discovers its worth. Hyssop is native the eastern Mediterranen countries and so it needs sun and dry soils. Its name is probably the only Hebrew word for a plant that is used in English. Hyssop is mentioned in the bible as `Esóv` which was turned in English to `Yssov` and later to `Hyssop`. Its flowers appear throughout summer and are usualy blue - but there may be also appear white or pink flowers. For cooking the leaves are used, either in sauces and marinades or with cottage cheese and yoghurt. There must be many more ways to use it, we only got to be creative.
